
Ingredients:
- 1 lb ground turkey
- 1 tsp dried sage
- 1½ tsp Italian seasoning (no salt added)
- 1 tsp garlic
- ½ tsp salt
- ½ tsp black pepper
- 1 tsp crushed red pepper (optional)
- 1 small white onion
- 2 bell peppers (any color)
- 1 qt cherry or grape tomatoes
- 2 cloves garlic, minced
- 1 tsp Italian seasoning
- 2 tbsp olive oil, divided
- Freshly ground black pepper
- ¼ tsp crushed red pepper flakes
- 1 package (17½ oz) potato gnocchi
- ¼ cup grated Parmesan, plus more for serving
- ¼ cup fresh parsley leaves, chopped
Preparation Steps:
- Preheat oven to 425°F.
- In a bowl, mix ground turkey with sage, 1½ tsp Italian seasoning, garlic, ½ tsp salt, and ½ tsp pepper. Use a wooden spoon or hands to fully incorporate.
- Wash and chop bell peppers and onion into 1-inch pieces. Rinse tomatoes.
- Prepare a large sheet pan with aluminum foil and cooking spray.
- Toss onion, bell peppers, tomatoes, garlic cloves, 1 tsp Italian seasoning, 1 tbsp olive oil, and black pepper on the sheet pan. Shake gently to distribute.
- Add bite-sized chunks of turkey mixture to the pan.
- Bake for 18–20 minutes until turkey is cooked and vegetables are soft. Smash tomatoes slightly to release juices.
- In a bowl, toss gnocchi with Parmesan, remaining 1 tbsp olive oil, and ½ tsp salt.
- Turn oven to broil. Sprinkle gnocchi over turkey and vegetables. Broil until dark golden brown, about 3–5 minutes. Total cooking time: 21–25 minutes.
- Divide among four plates. Garnish with parsley and extra Parmesan if desired.
