Bring the PRIDE celebration to your plate with a rainbow of salad toppings. Gone are the days of basic chef’s salads – mix and match your greens with a colorful batch of plant-forward toppings! Tapping into the ROY-G-BIV spectrum will make your warm-weather creations more interesting, more flavorful and more nutritious.   

Adding more fruits, vegetables, nuts, seeds and beans means amplifying your plate’s nutrient diversity, and we all know diversity is the spice of life! A broader selection of vitamins and minerals is proven to support the body’s inflammation-fighting efforts. Eating more colorful plant foods also means you’ll get more fiber, helping support your gut and reduce your risk of chronic disease.

Red  

Apple. Strawberry. Radish. Tomato. Red pepper. Pomegranate seeds. Sun dried tomato. Roasted red pepper. Red cabbage. Raspberries.   

Orange  

Mandarin oranges. Orange pepper. Carrot. Sweet potato. Apricots. Cantaloupe. Peaches. Salmon. Shrimp.   

Yellow  

Corn. Yellow tomatoes. Yellow pepper. Summer squash. Pineapple. Starfruit. Asian pears. Hominy.  

Green  

Greens. Broccoli. Zucchini. Green grapes. Kiwi. Green beans. Avocado. Okra. Celery. Green peas. Green apples. D’anjou pears. Pepitas (hulled pumpkin seeds). Pistachios.  

Blue  

Blueberries. Kale. Concord grapes. Damson plums. Bleu cheese.   

Purple  

Red onion. Radicchio. Beets. Purple carrots. Purple asparagus. Purple cauliflower. Purple basil. Figs. Eggplant. Blackberries.   

PRIDE Rainbow Salad  

½ c strawberries, sliced  

½ c shredded carrots  

½ c yellow cherry tomatoes, halved  

2 c romaine lettuce, chopped  

½ c blueberries  

1 c red cabbage, shredded  

¼ c pistachios, crushed  

Creamy Vinaigrette  

3 tablespoons red wine vinegar  

2 tablespoon olive oil  

2 tablespoons pure maple syrup  

3 tablespoons hummus   

2 tablespoons water  

¼ tsp salt  

⅛ tsp black pepper  

Instructions 

Combine the salad ingredients in a large mixing bowl. Shake the vinaigrette ingredients in a mason jar with a tight-fitting lid. Drizzle the dressing over top when ready to serve and enjoy immediately. For a bit of extra fun, arrange the toppings in a pinwheel pattern in rainbow order: red, orange, yellow, green, blue, purple!
